Here are three delicious recipes that recreate your favourite takeaways if you want to save money by cooking at home.
Crispy fried chicken burger with chips and salad (serves 2)
Ingredients:
- 2 brioche buns
- 2 chicken skinless chicken breasts
- 1 garlic clove
- 8ml soy sauce
- 15ml balsamic vinegar
- 4 tbsp cornflour
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1 gem lettuce
- 30ml mayonnaise
- 3 white potatoes
- 1 tomato
Step One
Cut the potatoes into thin strips and add them to a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Place the baking tray in the oven for 20-25 minutes.
Combine the chicken strips, soy sauce, and smoked paprika in a mixing bowl. Mix it all together.
In a separate shallow bowl, add the cornflour and dried oregano with a pinch of salt and pepper. Mix it all together to create a herby flour mix.
Step Two
Take the chicken strips out of the bowl and press them into the herby flour mixture. Coat them evenly on all sides.
Step Three
Over medium-high heat, add the coated chicken strips to a large pan with a generous drizzle of vegetable oil. Cook for 5 minutes per side, or until golden brown and cooked through.
Step Four
Place the brioche buns on a baking sheet and cut them in half. Bake for 5 minutes, or until they are warmed through and slightly crispy.
Step Five
Shred the gem lettuce and dice the tomato.
Step Six
Finely chop or grate the garlic and combine it with the mayo, 1 tablespoon of water, and a pinch of salt and pepper in a small bowl. To make a garlic mayo sauce, combine all of the ingredients.
To make a salad dressing, combine the balsamic vinegar, 2 tablespoons olive oil, and a pinch of salt and pepper in a separate small bowl.
Step Seven
Spread the garlic mayo on the warmed brioche buns and top with some of the gem lettuce. Top with the crispy fried chicken.
Serve the remaining lettuce and tomato on the side, drizzled with salad dressing.
Build-your-own pizza
Ingredients:
- Pizza bases
- Tomato puree or pesto
- Cheese
- Toppings of your choice!
Step One
Spread the sauce on the pizza base and roll it out. Sprinkle cheese on top, followed by your preferred toppings.
Our favourites include:
Pepperoni – slices of pepperoni, onion, extra cheese, mushrooms
Italian – rocket salad, prosciutto, mozzarella, black olives
Vegan – vegan green pesto and vegan cheese, mushrooms and olives
Step Two
Cook in the oven for the time specified on the pizza base package, or until the dough and toppings are thoroughly cooked. Remove from the oven and drizzle with olive oil before serving!
Easy one-pan butter chicken curry (serves 2-3)
Ingredients:
- 1 medium onion
- 1 tsp ginger
- 2-3 cloves of garlic
- 2-3 boneless and skinless chicken breasts
- 4 tbsp tomato paste
- 1 tbsp garam masala
- 1 tsp chilli powder or paprika
- 1 tsp Fenugreek or mustard seeds
- 1 tsp cumin
- 1 tsp salt
- ⅓ tsp black pepper
- 1 cup heavy cream
Optional:
- Microwaveable rice and naan bread
Step One
Place the naan bread on a baking tray and warm it in the oven. Chicken should be cut into bite-sized pieces. Melt the butter in a large saucepan or skillet over medium-high heat.
Step Two
Cook for about 4 minutes, or until the onions are lightly golden, in the pan with the oil, butter, and onions. Stir in the ginger and garlic for 30 seconds.
Step Three
Combine the chicken, tomato paste, and spices in a mixing bowl. Cook for 5-6 minutes, or until everything is thoroughly cooked.
Step Four
Microwave the rice until it is tender. Cook for 8-10 minutes, stirring occasionally, after adding the heavy cream. Serve with naan bread and rice once cooked.
