The Perfect Christmas Lunch
Chicken & Stuffing Sarnie with Plum Chutney
Serves two

Ingredients:
- 2 British chicken breast portions
- 1 tsp dried sage
- 50g baby leaf salad
- 30g panko breadcrumbs
- 2 ciabattas
- 30ml mayonnaise
- 40g spiced plum chutney
- 125g cherry tomatoes
- 1 shallot
Step One
Pre-heat the oven. Peel and finely chop the shallot, then add it to a small bowl with the panko breadcrumbs, dried sage, a large knob of butter and 50ml of boiled water. Season with salt and pepper and mix it all up.
Step Two
Add the chicken breasts to one side of a baking tray and spoon the sage and onion stuffing onto the other side. Drizzle some olive oil over the chicken and season with salt and pepper. Put it all in the oven for 15 minutes or until the chicken is cooked through.
Step Three
Once the chicken is cooked, remove it from the oven with the stuffing. Put the ciabattas into the oven for around 5 minutes or until lightly toasted.
Meanwhile, shred the chicken apart using two forks. Once the ciabatta has warmed, assemble the sandwiches. Drizzle the mayonnaise over the ciabattas, followed by the baby lead salad, the pulled chicken and the sage and onion stuffing. Finish it with the spiced plum chutney on top, and finally, serve!
Christmas Food for Sharing
Vegan Christmas Wreath
Serves 6-8

Ingredients:
- 250g spinach
- 250g tofu
- 50g toasted pine nuts
- Grated nutmeg
- 2 garlic cloves
- 2 zested lemons
- 1 small packet of dill
- 1 tbsp sour of cherries
- ½ tbsp of dried cranberries
- 500g block shortcrust pastry
- Almond milk
Step One
Add the spinach to a colander and pour over boiling water to wilt it. Once wilted and cool, squeeze out the excess moisture and chop it all up. Add it to a large bowl with the tofu, oil, pine nuts, nutmeg, garlic, lemon zest and chopped dill. Season with salt and pepper and give it a big mix-up.
Step Two
On a clean surface, roll out the pastry and cut out a 60 x 20 cm rectangle. Leaving a border of 1cm, spoon the spinach mixture along the length of the pastry, with a 2cm gap at both short ends. Use the short ends to fold the pastry back on itself. Roll the pastry away from you to create a long sausage shape with the mixture inside the pastry.
Take both ends and join them together to make a wreath shape. Use the almond milk to make the ends stick. Transfer the wreath to a baking tray lined with baking parchment and chill for around 20 minutes.
Step Three
Heat the oven to 200C. Using a sharp knife, cut slashes along the top of the wreath. Mix the almond milk with a little bit of oil and brush the mixture over the wreath. Bake for 40-45 minutes, then transfer to a board. Sprinkle any additional cranberries and dill over the top and serve!
Christmas Movie Night Dinner
Festive Pork & Sage Stuffing Pizza with Gravy Dip
Serves 2

Ingredients:
- 1 tsp dried sage
- 3 Proper Porker sausages
- 125g mozzarella ball
- 40g cranberry sauce
- 15ml Henderson’s Relish
- 2 pizza bases
- 5.5g beef stock mix
- 32g tomato paste
- 15g crispy onions
- 80g spinach
Step One
Preheat the oven and boil a kettle. Squeeze the sausage meat out of their skins, add the dried sage and give everything a good mix. Then, divide the mixture into about 12 small meatballs.
In a small bowl, combine the tomato paste with a drizzle of olive oil and 4 tbsp of cold water. Season with salt and pepper and mix it all up to create a tomato sauce.
Step Two
Dissolve the beef stock mix and Henderson’s Relish in 250ml of boiled water. Wilt the spinach in a colander by covering it with boiled water. Once wilted and cooled, squeeze out any additional water and set aside.
Drain the mozzarella and then tear it into small bite-sized pieces. Add your pizza bases to a baking tray and evenly spread the tomato sauce over both. Top both pizzas with the wilted spinach, mozzarella and your small meatballs.
Step Three
Cook for around 15 minutes.
Whilst the pizzas are cooking, heat 15g of butter in a large, wide-based pan. Once the butter has melted, add 15g of flour and stir until a sandy paste forms. Then, gradually add the beef stock into the mixture until it turns into a gravy-like substance.
Once the pizzas are ready, top them with cranberry sauce and the crispy fried onion. Serve them with the gravy dip on the side.
